We decided to make a turkey for Thanksgiving. One thing I did not consider, which was a carry-over from chicken roasting: the turkey would be in the oven longer than a chicken. So, not thinking this, I rubbed her all over with herbed butter from Ireland.
The tasty was delicious, as it underwent a 16 hour brining.
But the result was a bit dark for most tastes. The gravy I made I think made up for previously-sour takes on turkey. It was flavorful and had some tang, thanks to the addition of cider vinegar.
